I've been looking at the PCM3008 codec for use on the interface.
While it is not the most convenient to use it is cheap and gives a
reasonable cost/performance benefit. Analog Devices has a line of
really nice ones (AD1885 for example) but they seem like they have
more features than would be necessary.

I'm looking at the AD188X devices. They have gain/mute/attenuation for each channel. Inputs are mic (2), CD (stereo), line (stereo), video (stereo), BEEP, and mono telephone. Outputs are mono, stereo line, and stereo headphones. It also has variable sample rates and uses the AC'97 protocol which is pretty easy to implement in an FPGA.

I haven't had time over the last week to look at
very much but I did grab this datasheet. It looks
like a good part. A few others at ti's site have
AGC on their ADC inputs, which would be nice, as
well as standard analog output drivers, again nice.
If one of these things had digital volume control,
I'd be in heaven :-) I'll have a gander at AD's
site when I have a chance.
