Hey, you can correct this problem, open up the computer and there is 
three pots on the main board near the ULA chip and use non-conductive 
screwdriver, tweak the pots, I suggests you run a program that generates 
color bars test also fine tune the trim pot (the crystal oscillator) to 
set to proper frequency as specified in the technical manual. I've done 
it to correct a minor dis-tune.

2. terribly fuzzy and black and white video..

So I bought a 2068 on ebay and it works good except the video
(compsite video, not RF) is very fuzzy, and in black and white.. I
tried the RF output too and it is the same.. and I tried 3 different
TVs.. any suggestions ?? All colors appear as shades of gray!

That is what I was thinking of doing but this is the second timex 2068  I have bought in 3 months and the first one also had the exact same  problem. So apparently this is a common problem. Do you know what may  be causing it ? I have tried replacing every filter capacitor in the  old one, and it slightly helped the colors but the fuzzy, noisy image  did not improve a single bit. Hmmm... What is it that time is doing to  those machines !?? This one, I was told, spent the last 20 years  sitting in a box in an attic.

Also another thing, you may have to peform some renovation of the RF 
modulator and tune-up to bring the unit to the specs as outlined in the 
technical manual. in most cases, the caps and resistors may need to be 
checked for values that may have drifted out of it's tolance. There is 
many factors.
