Hi Luis,
A great source of information about TS video modes is the Timex Sinclair 2068 Technical Manual. There are two versions of it, the old one that have low resolution and missing pages and the new one with better resolution and all pages scanned.
Other tools that can be used is Z88DK and sprite pack library (general graphitcs library too) to develop in C instead of assembler.

Mojon twins is a Spanish group of programmers that currently are writing games for ZX spectrum, source code can be downloaded too. They use Z88DK and other tools to make their games.
